Rotini with Chorizo and Queso Fresco
Enjoy this modern twist on traditional Italian pasta with Mexican fusion. We have elevated pasta with Mexican favorites – chorizo, a highly seasoned pork sausage and queso fresco, a soft, salty and slightly tangy cheese. This crowd pleasing dish is finished with the rich, tangy and subtly smoky flavor of chef-crafted Cucina Moderna Vodka Sauce.

- 12 ounces uncooked rotini pasta
- 1 teaspoon vegetable oil
- 3/4 pound Mexican chorizo sausage
- 1 medium onion thinly sliced
- 1/2 pound mini sweet peppers cut into thin rings
- 1/4 teaspoon kosher salt
- 1 jar (20 ounces) CUCINA MODERNA® Fire Roasted Vodka Sauce
- 1/2 cup crumbled queso fresco cheese
- 1 cup loosely packed cilantro leaves
- 1 lime cut into wedges
Instructions
- Cook pasta 1 min. less than directed on package. Reserve 1/4 cup pasta cooking water. Drain.
- Meanwhile, heat oil in large nonstick skillet on medium heat. Cook sausage 4-5 min. until rendered. Add onions, peppers and salt; cook, 3-4 min. until crisp-tender.
- Add Cucina Moderna Vodka Sauce, pasta and reserved pasta water.
- Mix gently 1-2 min. on low heat until well combined.
- Sprinkle with cheese and cilantro before serving with lime wedges.
