Miso Mushroom Marinara
We put a modern twist on the Italian classic pasta marinara with a fusion of miso, a favorite Japanese seasoning! The creamy miso gives pasta a new culinary experience with an umami rich flavor. This delicious, flavor packed pasta dish is a must try!

- 2 medium carrots halved lengthwise, chopped
- 2 ribs celery coarsely chopped
- 1 medium onion coarsely chopped
- 2 tablespoon olive oil
- 1-1/2 pounds mixed sliced mushrooms
- 2 cloves garlic
- 1 teaspoon kosher salt
- 1 tablespoon white miso paste
- 1 jar (20 ounces) CUCINA MODERNA® Robust Marinara
- 12 ounces uncooked spaghetti or pappardelle
- parmesan cheese shavings
Instructions
- Process carrots, celery, onion and garlic in food processor in batches until finely chopped. Heat oil in large pot on medium-high heat. Add vegetables and salt; cook 6-7 min., stirring occasionally until tender.
- Add mushrooms to vegetables in pot; cook 7-8 min. or until most liquid is evaporated. Add miso and sauce; stir gently until well combined

Notes
Miso is a fermented soybean paste that adds depth and umami to any dish. It is available in the Asian section or in the refrigerated case of the grocery store.
